Baby Kale & Coriander Salad Bowl with Pistou Dressing
INGREDIENTS
- 1 cup Future Fresh Baby Kale
- 1 cup Future Fresh Coriander (Wansoy)
- 1 small red onion, sliced thinly
- 1/3 cup assorted nuts
- 1/2 cup mango, cubed
- 1 piece green apple, sliced
For the Pistou (just like the pesto sans the nuts and dairy):
- 2 cups Future Fresh Basil
- 1/4-1/2 cup EVOO
- 3 cloves garlic
- 2 drops DoTERRA lemon essential oil
- Salt & pepper
PROCEDURE
- Combine all salad ingredients in a bowl.
- Blend all pistou ingredients using a high speed blender.
- Drizzle Pistou Dressing on top
